3I bit too largeAug 08, 2010
This thing is half again the size of a tortillia. So much larger that it takes a lot longer to heat up but not large enough to fit two tortillias on it. I'm looking around now for a samller one to replace it with.

5Great crepe panAug 02, 2010
I got this pan and let it sit for a week. I looked at the surface and said no way I am cooking with this. I cleaned with a brillo pad then re-seasoned it. I spent 3 hours wiping with oil and letting it smoke on the stove. Afterwards I did crepes.

Mixed up 1 cup flour, 1 cup milk, 2 eggs, 1/4 stick melted butter, etc, plus a little water to thin it out. Most cast iron has this weird heat pattern, this pan didn't. 20+ crepes in about 12 minutes all perfect with no need for butter. One right after another without the need to wait for the pan to re heat. I have to say I like this companies cast iron.

This is great for baking it just takes some getting used to. Cookies and turnovers get over cooked unless turned.

As for the reviewers who complain about the handle getting hot. Just buy the lodge signature series with stainless handles (it only costs 5 to 10x as much) or buy a good oven mitt or two.

Obviously several of the reviewers are illiterate as they didn't read the care instructions. But to be fair Lodge doesn't say that you really need to boil water in the pan and then wpie with oil and heat before using. The pre-seasoning only shortens the seasoning process, it DOES NOT REPLACE SEASONING!

A few things to remember about cast iron. It doesn't take a lot of burner heat to get it hot. Don't get overzealous in cleaning. A coating of grease makes it better. Steaks are cooked to perfection by sprinkling a layer of salt on the pan and frying on medium heat until done to your liking. Cleanup is a breeze. Just grab the hot griddle with an oven mitt and running hot water on it until the crusties come off. Scrub just a little, then put the clean griddle back on the now turned-off burner to finish drying. Add a little coating of oil if you want it more seasoned.

I bought this griddle for my grandmother to replace an old griddle/comal that she's had for at least 30 years before finally cracking down the middle. After learning a lot about the intricicies of cast iron, I realized that she never took care of her products like you're really supposed to, so the griddle only lasted her 30 years instead of a lifetime . . . still a great value! And hey, she's an old Mexican grandma. She was more worried about making sure her 7 kids were fed than she was about making sure her cast iron products looked pretty. Someone go find me a teflon product that will last 4-5 years, much less 30!

Anyway, I was visiting her when I ordered the product so I could season it when it arrived. Of course, this line of Lodge products come already pre-seasoned, but I think it's always good to season the cast iron yourself no matter what. After giving it a good wash with a stiff brush and hot water, I dried it and cooked some bacon on it, wiped down the pan, spreading the fat around, and dropped it in the oven for about an hour. I then gave the griddle another wipe-down and let it sit for a while. The result? During the rest of my visit, I cooked eggs, pancakes, steaks, and many other things on the griddle without any of it sticking and using only a minimal amount of oil. My grandma also got the chance to make tortillas on it (the primary use for her previous griddle). Lodge really does make great cast iron cookware and this griddle is evidence for that claim. This griddle will probably last the rest of my lifetime. And for the price, that's an amazing value!
